 Chickpea and Spinach Salad


Ingredients:

- 1 can (15 oz) chickpeas, rinsed and drained

- 2 cups fresh spinach leaves

- 1/2 cup cherry tomatoes, halved

- 1/4 cup cucumber, diced

- 1/4 cup red onion, thinly sliced

- 1/4 cup feta cheese, crumbled (optional)

- 2 tablespoons olive oil

- 1 tablespoon balsamic vinegar

- 1 teaspoon Dijon mustard

- Salt and pepper, to taste


Instructions:

1. In a large bowl, combine chickpeas, spinach, cherry tomatoes, cucumber, and red onion.

2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.

3. Pour the dressing over the salad and toss to combine.

4. Sprinkle with feta cheese, if desired. Serve immediately.
